Super Simple Gluten-Free Pumpkin Chocolate Chip Cookies


This is probably the easiest (laziest?) recipe I've ever done. I took some awesome pre-made cookie dough and just made it awesomer! If you're not familiar with Eat Pastry cookie dough, get familiar. It is SO good and pre-made! Yes, I know making cookies from scratch is fun too, but sometimes you come home from work and you just want a giant spoonful of cookie dough, you know what I'm sayin'? Any-hoo! It's officially fall now so if you're anything like me, it's all about the pumpkin from now until New Years!


Ingredients:

1 tub Eat Pastry gluten-free chocolate chip cookie dough
1 can organic pureed pumpkin
Chickpea flour, as needed
Cinnamon to taste
Nutmeg to taste

Preheat oven to 350ºF
In a large mixing bowl, combine entire tub of cookie dough and about 1/2-3/4 can of pumpkin.
It will be a lot more liquidy with the pumpkin added so add chickpea flour 1-2 TBSP at a time until you get back to that doughy consistency.
Add cinnamon and nutmeg to taste. (I did a LOT of tasting...just to make sure it was good...*cough*)
Scoop a TBSP of dough at a time onto a greased baking sheet. Squish down a bit with the spoon.
Bake for 15 minutes. Let cool a bit, then EAT!

The consistency of the cookies was very cake-like. Not sure if it was the chickpea flour or what, but they were SO GOOD! And GLUTEN FREE!! WHOOPEE!!
